It’s Monday and if you want to kick-start your week with something sweet, my recipe of White Chocolate Cranberry Cookies can help you with that 🙂
On Friday I had cleaned the house and I felt like baking some nice cookies and as one of my favorite cookies are cookies from the store, that are chocolate chip cookies with white chocolate and cranberries I wanted to try to make my own homemade cookies inspired from those cookies.
These turned out to be amazing and so crunchy yummy!
Start the oven to 175 Celcius (347 F) and prepare two oven trays with baking sheets.
Whisk sugar, vanilla sugar, syrup, egg and the yolk together.
Pour in the melted butter who has cooled down a little and add half of the cup with chocolate buttons and cranberries. You want to have a little to put on top later as well.
Take a separate bowl and mix together the flour, bicarbonate, and salt. Then add the flour mixture and whisk everything together to a firm cookie dough. It can be hard to whisk, so I can recommend you to use a spoon or your hands when you add the flour mixture.
Create small e round balls, like in the size 2,5-3 cm in diameter. Then use two fingers and push in the middle of each ball and make each cookie a little flatter. They don't need to be perfectly round in shape 🙂
To add even more goodies, I recommend using the rest of the chocolate buttons and cranberries and add it to each cookie.
Let the cookies bake in the lower section in the oven for about 10-11 minutes. You want them to get like a slight golden color before you take them out.
Let them cool down on the counter before you move them from the oven tray.
I let my cookies stay in the oven for 12 minutes, but I can recommend you to take them out after 10-11 minutes if you want them to be chewier in the middle. They get crunchy around the corners and chewy in the middle. Sooo delicious!

It’s Friday and I had a half day at work and now my Easter weekend has started, feel very lucky as I have about 1,5 week off from work now and can be home with my kids who have an Easter break next week from school 🙂
Earlier this week I felt for a little Easter baking, so I went ahead and made some nice chocolate Easter cupcakes with bright yellow cream cheese frosting.
Whisk eggs and sugar really white and fluffy. (I used an electric mixer)
Add baking soda, powder sugar, and cacao and whisk it together.
Pour in the butter and milk mixture and add the flour. Whisk it all together to a nice cupcake batter.
Place cupcake cups on an oven plate or use a cupcake form. And fill the cups about 2/3.
Let the cupcakes bake in the middle of the oven for 10 minutes.
Then let them cool down on the counter.
While the cupcakes are cooling down, you can start making the frosting.
Whisk or stir all the frosting ingredients together with a hand whisk or with a tablespoon until you have a nice yellow creamy frosting.
Start with like 2 tablespoons of color and add more if you want to make the frosting a bright yellow color!
Decorate the cupcakes with something Easter related, like colorful sprinkles, chocolate eggs or jelly candy eggs.
When my daughter saw these chocolate Easter cupcakes on the counter after she came home from school that day, she really brightening up and wanted to have one immediately. She thought they were so pretty 🙂
Really love using cream cheese frosting, cause it balances the sweet icing sugar very well and it makes the frosting to not being too sweet.

Let’s kick off this Sunday with a lovely, nice and sweet recipe for Snickers Squares. This is great to bake when you crave for something sweet, need something for the family game/movie night, for your kids birthday or it’s an easy recipe to bake with your kids.
Melt butter, sugar, and syrup in a saucepan. Then remove the pan from the hot plate.
Crush cornflakes and mix in the saucepan. Then pour in rice krispies and stir so it all blends together.
Put a baking sheet on a baking pan in the size about 22 × 30 cm (the baking pan I used is 23 × 32 cm). Then pour the batter and spread it evenly. Let it stand and cool for a while.
Break the chocolate into smaller pieces and melt in a water bath.
Then pour the melted chocolate over the cooled snickers batter and spread it evenly over. Put it in the fridge until the chocolate has solidified and then cut it into squares. The amount of snickers squares you get depends on how small or big you choose to do.
